the lemon chicken. Its crunchy texture, smooth lemon flavor and ease of chewing
(like almost all Chinese food), make it an ideal dish for children and adults.

Lemon Chicken Recipe
Ingredients:
2 chicken breasts (about 700g)
Breadcrumbs
2 eggs
50 g (6 tablespoons) cornstarch
4 lemons
50 g (1/4 cup) granulated sugar
10g (1 tbsp) cornstarch
Preparation stepper lemon chicken
For each chicken breast, use the hammer to tap the breasts
to become flat.
Trim the fat. Cut each breast into about 4 pieces. Set them
aside. Sprinkle with a pinch of salt over the chicken breasts (use a teaspoon
of salt for two chicken breasts). If you want you can sprinkle some fresh
ground pepper on the chicken breast as well.
In a small bowl, beat eggs slightly. In a skillet, heat oil
over medium heat. Roll each breast for cornstarch or cornmeal (use the amount
of 50g), removing excess. Dip in egg then the chicken and then coat completely
on both sides with bread crumbs. Fry each piece for 3 minutes per side and do them
out on paper towels to absorb excess oil.
Squeeze lemons previously reserving 2 thin slices for
garnish. Add enough water to make 360 grams
(1-1/2 cups). In a small saucepan over medium heat, add the diluted lemon juice
and sugar, stirring to dissolve. Boil and halve the amount of about 10
minutes. Meanwhile, mix the corn flour or cornstarch (10g) and 1 tablespoon
water in a small bowl until dissolved. Add the cornmeal mixture to reduce the
lemonade and stir. Boil until it reaches the desired consistency, about 2
minutes.
Place the chicken on a plate (chopped, if desired), and pour
the sauce over. Garnish with lemon slices and serve immediately with rice.
